Aiyah is head cheesemaker and creamery manager at a small creamery in the Applegate Valley of southern Oregon. Aiyah has had long had a love affair with cheese since her childhood. A gardener, homesteader and mother of 3, cheesemaking fit in with her dream of more self sustainability on the land. She started home cheesemaking in 2007 and has been making cheese commercially for 7.5 years. She is also a cheese and wine educator and teaches classes locally.
In this beginning cheesemaking class, we will look at the art and science of turning milk into cheese. We will be making fresh mozzarella, ricotta and burrata from local, organic cow’s milk from start to finish and students will have some cheese to take with them! Delicious.
